Mediterranean Pork Mushrooms


  • 1kg Pork Mince
  • Olive Oil
  • 1 Onion (Chopped)
  • 1 Packet of Streaky Bacon (Diced)
  • 2 Garlic Cloves
  • 140g Tomato Paste
  • 240g Tomato Puree
  • 10ml Dried Thyme
  • 10ml Dried Rosemary
  • 10ml Dried Oregano
  • Salt
  • Pepper
  • Mozzarella Cheese (Grated)
  • Portobello Mushrooms


  1. Pre heat the oven to 180°C
  2. Place a large frying pan over medium heat, add olive oil.
  3. Add onion, bacon and garlic, fry until light brown.
  4. Add mince and fry until cooked.
  5. Add tomato paste and puree, stir until combined.
  6. Lower the heat. Add dried herbs, salt and pepper to taste.
  7. Place Mushrooms, face up, in an oven proof dish.
  8. Dish mince over the mushrooms and garnish with as much mozzarella cheese as you like.
  9. Oven bake for 20 – 30 minutes, until mushrooms are soft.

Garnish with Fresh Microgreens. Remember that Microgreens is a visual enhancement and has great nutritional value!

Serve as a Spaghetti Bolognaise alternative.
