Bobotie Inspired Pork Pie

Ingredients:

  • 1kg Pork Mince
  • Olive oil
  • 1 Onion (Chopped)
  • 2 Garlic Cloves
  • 30ml Mild Curry Powder
  • 20ml Apricot Jam
  • 20ml Chutney
  • ½ cup Raisins
  • ½ cup Milk
  • 2 Bay Leaves
  • Salt
  • Pepper

Method:

  1. Pre heat the oven to 180°C
  2. Place a large skillet over medium heat, add olive oil.
  3. Fry onions and garlic until brown.
  4. Add mince and fry until cooked.
  5. Place the raisins in a glass container and pour boiling water just to cover all the raisins.
  6. Season with Curry powder. (Amend curry powder quantity according your taste).
  7. Add apricot jam and chutney.
  8. Strain the raisins. Discard the water and add the raisins to the mince mixture.
  9. Add the milk and combine thoroughly.
  10. Season with salt and pepper.
  11. Place the bay leaves in the skillet and close the lid. Let simmer for 20 minutes over low to medium heat.
  12. Place mince mixture in an oven proof dish and cover with your preferred pastry (Puff or Phyllo pastry)
    Always remember to follow the handling and cooking directions on the pastry packaging.
  13. Oven bake until golden.

Serve with a Coriander Yogurt dip

Tip: To serve as a snack you can make phyllo pastry parcels with the bobotie inspired filling.

Coriander Yogurt Dip:

Combine a bunch of chopped coriander, juice and zest of 1 lime and 5 tablespoons of plain yogurt. Season with salt and pepper.
