Christmas Roast with Deboned Pork Neck

Ingredients:

  • 1 MALU Pork Neck DDD

  • 2 Table spoons Ginger powder

  • 2 Table spoons Crushed Garlic

  • Salt

  • Pepper

  • Olive Oil

  • 1 Onion

  • ½ Whole Garlic

Method:

  1. Preheat your oven to 180°C, only using the bottom element of the oven.
  2. Spice the whole pork neck with salt, pepper, ginger powder and garlic (don’t be shy with the garlic and ginger).
  3. Put the pork in an oven proof dish. Quarter the onion. Place the onions and whole garlic around the Neck. Drizzle olive oil over the pork, onions and garlic. You can add one or two fresh rosemary branches for some extra flavour.
  4. Cover the dish with foil. Place in a hot oven for 2 to 2 ½ hours.
  5. Remove the foil. Change oven setting to top and bottom element. Return the meat to the oven allowing to cook another 45 minutes to 1 hour.
  6. Serve with your favourite Christmas side dishes. Keep in mind that a creamy mushroom sauce is the perfect match for this roast.
