Ingredients:
1 Onion
15ml Crushed Garlic
1kg MALU Pork Mince
60ml Medium Curry Powder
60ml Chutney or Apricot Jam
25ml Turmeric
20ml White Vinegar
400g Canned Veggies in Brine (Discard the brine)
2 Bay Leaves
Method:
- Over medium heat fry the onion and garlic until light brown.
- Add the pork mince and fry until cooked.
- Add the Curry powder, Chutney, Turmeric and Vinegar, mix through and allow to cook 5 minutes.
- Add the canned veggies, mix through.
- Add the bay leaves and close the lid. Turn off the heat and allow to rest 10 to 15 minutes.
- Serve with rice or in a traditional South African vetkoek.
