Ingredients:
4 Orange Sweet Potatoes
1 Onion
15ml Crushed Garlic
1kg MALU Pork Mince
15ml Mixed Herbs
240g Tomato Puree
400g Canned Diced Tomatoes
Salt
Pepper
410g Canned Whole Corn in Brine (Discard the Brine)
Method:
- Oven medium heat fry the onion and garlic until light brown.
- Add the Pork mince and fry until cooked.
- Add the mixed herbs, tomato puree, canned tomatoes, salt, pepper and corn.
- Mix through to ensure that everything is well combined.
- This mince mixture can be served with Nacho Chips or on top of a cooked sweet potato. Add your favourite Mexican toppings (sour cream, salsa, jalapeños, grated cheese and guacamole).
