Butterfly both fillets (Cut the fillet open like a book, not cutting all the way through)
Tenderise your fillets with a Meat mallet
Season the inside of the fillets with salt and pepper
Place chopped sundried tomatoes to the one side of the fillet
Crush the Feta cheese and sprinkle over sundried tomato
Roll the fillet
Tie with rope
Melt butter in a pan and add olive oil
Fry the fillets 2 – 3 minutes per side
Take off the heat and let rest for 10minutes before serving.
Serve with Tabbouleh
Ingredients for Tabbouleh:
Prepare Cous-Cous and let it cool down.
Mix all the ingredients together.
