Pork Fillet Stuffed with Sundried Tomato & Feta, served with Tabbouleh


  • 2 MALU Pork Fillets
  • 4 Sundried tomatoes (chopped)
  • 1 Feta cheese wheel
  • 100g Butter
  • 2 Tablespoons Olive Oil
  • Salt and Pepper


Butterfly both fillets (Cut the fillet open like a book, not cutting all the way through)

Tenderise your fillets with a Meat mallet

Season the inside of the fillets with salt and pepper

Place chopped sundried tomatoes to the one side of the fillet

Crush the Feta cheese and sprinkle over sundried tomato

Roll the fillet

Tie with rope

Melt butter in a pan and add olive oil

Fry the fillets 2 – 3 minutes per side

Take off the heat and let rest for 10minutes before serving.

Serve with Tabbouleh

Ingredients for Tabbouleh:

  • ½ bunch Parsley
  • ½ bunch Mint
  • 1 Cucumber
  • 2 Spring onions
  • 3 Tablespoons Lemon juice
  • 2 Tablespoons Olive Oil
  • 1 Red or Yellow pepper
  • 1 Garlic clove (Crushed or Finely chopped)
  • 1 cup Cous-Cous
  • A handful of cherry tomatoes
  • Salt and Pepper to taste

Prepare Cous-Cous and let it cool down.

Mix all the ingredients together.
