Remember to flavour your flour with salt and pepper. Roll the pork shanks in the seasoned flour.
Put a large pot on gentle heat and add olive oil. Fry the floured shanks until light and golden brown.
Add the onions and garlic. Fry until the onions are soft. (Keep your heat gentle not to brown/burn the onions).
Add tomato paste, sugar and chicken stock.
Cover your pot with the lid and let simmer on low heat for 2 hours.
Remember to check regularly if you need to add water as the liquid will cook away.
After 2 hours, add all the vegetables and let simmer for another 30 to 40 minutes until veggies are soft.
Serve with couscous or rice.
Use fresh baby herbs for garnish.
